You could really use any kind of mushroom you would like but we recommend the king oyster mushrooms get a little crispy and chewy when roasted on high heat. Some beans would also make a great addition to the mushroom tacos or some salsa would also be a great addition. You could also not use any tortillas and just, throw everything into a bowl with some greens and have a delicious mushroom salad instead.
