Kennett’s Mouthwatering Cheesy Maitake Mushroom Beef Quesadillas

INGREDIENTS

1 tablespoon (20g) butter

1/2 medium brown onion, finely diced

1/2 pound mouth-watering maitake mushrooms, roughly diced

1 teaspoon finely chopped garlic

500g packet Coles Butcher 3 star beef mince

1/2 teaspoon dried oregano
-
1/2 teaspoon ground cumin
-
1 teaspoon smoked paprika

10 regular sized tortillas
-
250g extra tasty cheddar, grated
AVOCADO SMASH (Optional, but highly recommended)

2 avocados, stone removed

Juice of 1 lime

1 tablespoon finely chopped coriander

1/2-1 teaspoon salt, or to taste

1 teaspoon Mexican chilli powder (optional)
DIRECTIONS

Step 1Place a large frying pan over medium heat, add butter, once melted add onion and maitake mushroom, cook for 5 minutes, add garlic and cook for a further 2 minutes.

Step 2Add beef mince, oregano, cumin and paprika. Break up mince with a spatula and stir well to combine with other ingredients, cooking for about 5 minutes until mince is cooked through. Remove from heat and set aside.

Step 3Place a tortilla on griddle or frying pan, place some cheese on half of the tortilla, top with a few tablespoons of mince mixture then sprinkle with a little more cheese. Turn heat onto medium-low, allow cheese to melt slowly and for the tortilla to crisp up, this should take around 3 – 5 minutes. Fold over tortilla.

Step 4Meanwhile for smashed avocado, place avocado, lime juice, coriander, salt and chilli powder in a mixing bowl and mash roughly with a fork.

Step 5Once tortilla is cooked, remove from heat and slice into wedges, serve with a dollop of smashed avocado.
